November 2, 2009: Creamy Boundary Pasta Bake

cashew cream sauces we've discovered this year, I started my shopping listing too moved on to flavourings. Garlic too onion? Done. Then another veges - fennel, celery too asparagus adjust the season. While I would convey dearly loved to add together unopen to lemon juice or mustard to the mix, such acidic accents are really clearly on James' blacklist.

So I gear upwards most roasting too sauteeing veges, blending upwards a sauce too cooking unopen to pasta. While all the elements tasted good, the terminal mix was pretty ugly too a chip gluggy. It looked a chip to a greater extent than enticing when at the in conclusion infinitesimal I decided to transfer it to a baking dish, sprinkle it alongside rice crumbs (our breadstuff had unopen to suspicious 3-digit additives), too bake it 'til the tiptop was a piffling golden too crispy.

Creamy jump pasta bake

1. Saute and/or bake unopen to veges alongside sunflower fossil oil too salt. I:
  • slow cooked 2 onions (sliced into rings) until caramelised, most 45 minutes;
  • sauteed iv chopped sticks of celery too 1 really large sliced fennel bulb until tender, most xx minutes;
  • baked ii chopped bunches of asparagus too iv cloves of garlic until tender, most xv too 25 minutes respectively.
2. Blend upwards a creamy sauce inwards a nutrient processor.
  • Start past times grinding 2 1/2 cups cashews to powder.
  • Add a 400g tin chickpeas, rinsed too drained.
  • Add 1/2 loving cup of Nuttelex, too tabular array salt to taste.
  • Finish alongside the baked garlic cloves too 1/4 loving cup water. (Maybe upwards to 1/2 loving cup H2O to trim back glugginess.)
3. Cook 500g of pasta.

4. Stir it all together inwards a large pot, adding the chopped leaves of the celery (or unopen to parsley - it's allowed!). If you're happy too hungry, become ahead too eat! Otherwise, transfer it all to a baking dish, sprinkle over unopen to rice crumbs, too bake until the tiptop goes crispy too golden, most xx minutes.
