2 cups quinoa, uncooked but rinsed
2 cups water
1 mushroom stock cube
145g soy bacon, sliced
1 onion, chopped
600g mushrooms, sliced
1 teaspoon oil
3 large eggs

1/4 teaspoon salt
1/2 teaspoon pepper
1/2 loving cup flat-leaf parsley, chopped
