May 28, 2008: Chickpea Cutlets

1 loving cup cooked chickpeas (I used a 400g can, drained)

2 tablespoons soy sauce

1/2 teaspoon lemon zest
1/2 teaspoon dried thyme
1/2 teaspoon Hungarian paprika
1/4 teaspoon dried rubbed sage
extra stone oil for frying or greasing

Mash the chickpeas too stone oil together inwards a bowl until smooth. Add the remaining ingredients too combine to degree a dough. Knead the dough for nigh three minutes, until gluten strings form. Divide the dough into iv pieces too degree them into patties, no to a greater extent than than 1.5 cm thick.

Now y'all tin bake or shaver them. I did a combination of both: frying inwards a petty stone oil until golden on both sides, too therefore baking for a farther xv minutes to produce through.
